½ cup canned black beans
½ cup of cucumber
¼ cup of red onions
¼ of carrots
¼ of tomatoes
¾ cup of lettuce
3 teaspoons of camelina seeds
* You can use the vegetables of your choice depending on the season
2 tbsp. (30ml) applesauce
2 tbsp. (30ml) apple cider vinegar
1 C. (5ml) old-fashioned mustard
3 tbsp. (45ml) maple syrup
1/2 cup (125ml) camelina oil
Salt and pepper to taste
- Dice all the vegetables and place them in a bowl.
- [Vinaigrette] Combine all the ingredients in a bowl.
- Place the vinaigrette on the salad and sprinkle the camelina seeds on top.
